Fresh fruit is an easy option to start with. I could also suggest that you find someone who can make you food on a daily basis and deliver it to your gym. These can be as simple as sandwiches and wraps. You need high protein, high calorie foods which are simple to eat. As to how, that rather depends what you mean by “your gym”. Do you own it? In which case just do it. Or do you work there, in which case ask your boss about it. If you just attend the gym, it’s certainly worth asking the manager or owner about the possibility but make sure you have thought it through and done all the costings etc and show them how this would boost their profits. Good luck.

Your question falls under the Vegetarian/Vegan category, means you want to try and convert people to become a vegetarian. I don’t think its your place to introduce healthy foods to the gym you attend. Individuals decide what they want to eat at home. Going to a gym is another one of their choices, to become fit. So best leave the menu choices to an individual
